Description
Ambootia, or « Land of the mango trees », is one of the most famous gardens of Darjeeling in the foothills of the Himalayas. For over twenty years, this majestic plantation has been cultivated in complete harmony with this exceptional Terroir according to the principles of biodynamic agriculture, methods which have contributed to the fame of this prestigious appellation.
Dried leaves: The fine silver buds interlace with slender, twisted leaves in shades of emerald and jade. The ensemble, striking in its clarity, reflects meticulous crafting and a masterful hand—hallmarks of the most distinguished teas.
Infused leaves: Evanescent notes of tender pine needles give way to indulgent aromas of roasted apricot, uplifted by a warm undercurrent of Victoria pineapple.
Liquor: The radiant liquor graces the cup with precious tones reminiscent of antique gold leaf, unveiling a complex nose where ripe medlar entwines with a camellia blossom bouquet. The palate is enlivened by a distinguished structure, vibrant with honeyed accents of golden tamarind flower, expressing with brilliance the full vigour of spring. An intense renewal.
Preparation: 3.5g in 20cl of spring water at 95°C for 5 min.
Cold brew:
1 - place 15g of tea in 1 litre of spring water; keep in the fridge for about 12 hours.
2 - filter out the leaves then let the liqueur come to room temperature.
3 - best served in a large balloon glass, filled up to a third.
"Cold brew", a slow infusion in cold water, results in a further exploration of the infinite aromatic palette of this grand cru. The cold allows new fragrances to express themselves in a dazzling and totally intoxicating way.
