Description

Ambootia, or « Land of the mango trees », is one of the most famous gardens of Darjeeling in the foothills of the Himalayas. For over twenty years, this majestic plantation has been cultivated in complete harmony with this exceptional Terroir according to the principles of biodynamic agriculture, methods which have contributed to the fame of this prestigious appellation.

Dried leaves: They form an elegant springtime composition, in which delicate leaves of intense, luminous emerald green mingle with others displaying the noble hues of rosewood.

Infused leaves: Their indulgent aroma of roasted apricot is softened by the silky nuances of green almond powder. A finishing note of traditional English toffee delicately crowns this fruity accord.

Liquor: In a dance of golden mimosa gleams, the liquor reveals an exquisite fragrance, where the sweet scents of lavender honey intertwine with the floral roundness of buttercup blossom. The palate, generous and harmonious, unfolds luscious notes of ripe soursop, which blossom with effortless elegance.

Preparation: 3.5g in 20cl of spring water at 95°C for 5 min.

Cold brew:

1 - place 15g of tea in 1 litre of spring water; keep in the fridge for about 12 hours.
2 - filter out the leaves then let the liqueur come to room temperature.
3 - best served in a large balloon glass, filled up to a third.

"Cold brew", a slow infusion in cold water, results in a further exploration of the infinite aromatic palette of this grand cru. The cold allows new fragrances to express themselves in a dazzling and totally intoxicating way.
