According to Thai legend, when the full moon appears at the end of the rainy season, when the horizon is clear and bright, when streams and rivers are full, Heaven and Earth come to a halt for a few moments, long enough to breath in the white flowers that scent the air for 10,000 leagues around. Soft yet heady, these flowers are added to a lightly oxidized blue tea with skilfully worked leaves. The silky, pale yellow cup has delicate, supple floral flavours capped by notes of rising sap and sweet honey.
