Yellow tea has been a Chinese speciality since the sixteenth century. It is made from green tea: the leaves are placed in storage once the oxidation process has been halted, and the phenol they contain soon automatically oxidises to give the leaves – and the liquor- a mild, savoury bouquet.

This small-leaved yellow tea is made in the mountain city of Yueyang, known for its tea plants ever since the Tang dynasty (618-907). The mild climate and proximity of Lake Younghu create a humidity and vapour that meet with low clouds to produce beneficial rains. The buds, wrapped in a single leaf, are harvested prior to April 20th, and patiently handled according to traditional methods to obtain regular, fine leaves with distinct downiness. The golden yellow cup and deep liquor produce a pure aroma and pronounced flavour at once smooth, supple, and refreshing.

The large, handsome buds that make up this tea from Mount Huoshan, in Anhui province, are picked each year between March 27 and April 5, when temperature, humidity, and sunshine all come into rare alignment. The leaves are then processed over a four-day period, in order to produce a brilliant cup with an astonishing nose characterized by dense fragrances similar to medlar fruit. The clear liquor is very low in tannins, and remains highly present in the mouth with a rich, sweet flavour recalling roasted chestnuts.

The province of Hunan, known for its mountain slopes bathed in clouds and its mild temperatures, has developed unrivalled artistry in making great yellow teas. Picked by hand, the handsome, imperial-green buds are crafted into a jewel-like disc that unfolds, when placed in cup or teapot, to reveal long fine leaves whose display is a rare creation in itself. The liquor reveals notes of apricot and mandarin orange followed by a hint of flowers with spicy undertones. A delight for the eyes as well as the palate.
