Description
Ambootia, or « Land of the mango trees », is one of the most famous gardens of Darjeeling in the foothills of the Himalayas.
For over twenty years, this majestic plantation has been cultivated in complete harmony with this exceptional Terroir according to the principles of biodynamic agriculture, methods which have contributed to the fame of this prestigious appellation.
Dried leaves: Silver-tipped buds intertwine with delicate leaves in luminous shades of emerald, touched with enigmatic sapphire glints. The ensemble, remarkably fine, reveals a harvest accomplished with exceptional precision.
Infused leaves: A gentle fragrance of camellia blossom rises from the warm leaves, soon joined by the sweetness of roasted apple and the subtle flesh of mangosteen. As they settle, a deeper floral note unfolds, reminiscent of magnolia in full bloom.
Liquor: The buttercup-yellow liquor reveals a gourmand nose of calisson and orange-blossom pollen, lifted by hints of fruit drops bonbons. Broad and silky, it caresses the palate with a delicate texture, carried by tannins of exquisite finesse. The finish, long and radiant, drifts away on tender accents of golden grape.

Cold brew:
1 - place 15g of tea in 1 litre of spring water; keep in the fridge for about 12 hours.
2 - filter out the leaves then let the liqueur come to room temperature.
3 - best served in a large balloon glass, filled up to a third.
"Cold brew", a slow infusion in cold water, results in a further exploration of the infinite aromatic palette of this grand cru. The cold allows new fragrances to express themselves in a dazzling and totally intoxicating way.
