The large, handsome buds that make up this tea from Mount Huoshan, in Anhui province, are picked each year between March 27 and April 5, when temperature, humidity, and sunshine all come into rare alignment.
The leaves are then processed over a four-day period, in order to produce a brilliant cup with an astonishing nose characterized by dense fragrances similar to medlar fruit.
The clear liquor is very low in tannins, and remains highly present in the mouth with a rich, sweet flavour recalling roasted chestnuts.
